The best way to entertain

As the holiday season approaches, we start thinking of all the things we have to do, where we have to be, and what to serve our guests. Some gatherings are drop-in style, when you pop in to give your greetings and then head to the next event. Others can be a long night, whether you are hosting or popping by, a few must-haves for entertaining are finger foods and beverages.  Let’s try not to complicate this. You want fast, easy and enjoyable? I have a couple of entertaining ideas that are just that.

Prosciutto Wrapped Shrimp

25 (6-inch) Wooden skewers

1 T Olive oil

2 t smoked paprika

1 ½ t Ground black pepper

1 pound
Peeled and deveined shrimp
(about 25 large shrimp)

6 ounces Very thinly sliced prosciutto

Method:

Place the skewers in water and let them soak for at least 30 minutes. Heat the broiler to high and arrange a rack at the top.

Combine the oil, paprika, and pepper in a medium bowl. Add the shrimp and toss until evenly coated.

Skewer each shrimp through its center until the skewer emerges at the end. Cutting the prosciutto as needed, wrap each shrimp in a piece large enough to just cover its surface. Place on a baking sheet.

Broil until the shrimp are pink and the
prosciutto is crisp, about 5 minutes.

Spicy Avocado Sauce

3 Tomatillos, husks removed

4 Serrano Chilies

2T Chopped cilantro

1 Avocado, pitted and peeled

½ Lime, juiced

Salt & pepper to taste

Method:

Blend the tomatillos, Serrano Chile peppers, and cilantro in a blender until smooth. Add avocado and blend until smooth, season with salt. Serve immediately.

Spiced Cranberry Prosecco Punch

2 Cranberry ice blocks

4 Cinnamon sticks

zest of 2 oranges

5C White cranberry juice

3C Pineapple juice

2 bottle Prosecco

2 Oranges, sliced
